Chocolate blood orange bread…this is so decadent and so versatile! It’s amazing as a coffee cake, dessert, breakfast, or anytime! AND as always it’s low-FODMAP, paleo, dairy-free, gluten-free, grain-free, allergen-free!
Ingredients:
- 1/2 cup frozen organic strawberries/blueberries
- 3 Tbsp nut/seed butter (use coconut butter for nut-free version)
- 3/4 cup organic cacao powder
- 1 scoop Further Food collagen peptides (omit for vegan option)
- 1 Large or 2 Small organic blood oranges (or other citrus fruit)
- 1 tsp baking soda
Method:
- Preheat oven to 350 F and line a loaf pan with wax paper.
- Puree strawberries/blueberries.
- Wash citrusΒ thoroughly and puree in high powered blender or food processor (including skins).
- Combine all ingredients and mix well.
- Transfer mixture to wax paper lined loaf pan.
- Top with additional sliced citrus for garnish.
- Bake for 60-65 minutes or until a toothpick inserted into the middle of the loaf comes out clean. The middle will be soft and wet.
- Allow to cool completely.
- Refrigerate to allow to set.
