Chocolate Blood Orange Bread

Chocolate blood orange bread…this is so decadent and so versatile! It’s amazing as a coffee cake, dessert, breakfast, or anytime! AND as always it’s low-FODMAP, paleo, dairy-free, gluten-free, grain-free, allergen-free!

Ingredients:

  • 1/2 cup frozen organic strawberries/blueberries
  • 3 Tbsp nut/seed butter (use coconut butter for nut-free version)
  • 3/4 cup organic cacao powder
  • 1 scoop Further Food collagen peptides (omit for vegan option)
  • 1 Large or 2 Small organic blood oranges (or other citrus fruit)
  • 1 tsp baking soda

Method:

  1. Preheat oven to 350 F and line a loaf pan with wax paper.
  2. Puree strawberries/blueberries.
  3. Wash citrusΒ  thoroughly and puree in high powered blender or food processor (including skins).
  4. Combine all ingredients and mix well.
  5. Transfer mixture to wax paper lined loaf pan.
  6. Top with additional sliced citrus for garnish.
  7. Bake for 60-65 minutes or until a toothpick inserted into the middle of the loaf comes out clean. The middle will be soft and wet.
  8. Allow to cool completely.
  9. Refrigerate to allow to set.
